½ pack of tofu
¼ zucchini grated
1 carrot grated
3 cloves garlic
Salt & pepper
1 tsp Turmeric, 1 tsp Cumin, chili as desired
Drain the water from the tofu pack
Break the tofu with hands in a bowl
Add in the turmeric, cumin, salt, pepper, chili
Fry the garlic and onions with a bit of water or oil
Add the grated zucchini and carrot and fry for 3 min
Then add in the tofu and mix well as you would scrambled eggs.
Serve on wholemeal toast or have with some baked beans, and enjoy!
