Pumpkin & Pea Curry

2.5 g of pumpkin

1 onion

3 cloves garlic

½ cup peas

Cumin powder

Madras curry powder

Salt & pepper

Avocado oil

Veg stock



  1. Peel the outer layer of pumpkin and chop into cubes

  2. Heat some avocado oil and fry the onions and garlic

  3. Add the pumpkin cubes

  4. Add 1 cup of veg stock or water

  5. Add the cumin, salt & pepper, madras curry powder and simmer for 30min

  6. Add the peas and leave to simmer for 10min

  7. Serve with rice or couscous, and enjoy!
